Happy Valentine’s Day!
This post and recipe is dedicated to my sister who I love dearly and who needs to eat gluten free, soy free, many things free 🙂 edited to include – we found out a few months later nuts were included 🙁
I wanted to make something yummy but healthy for morning snack today and for dessert later.
Who needs to feel bloated and gross, feel healthy and fit!
We did the heart pan donuts for snack and made this cake/muffins for later for the adults 🙂
The kids LOVED them. They were so tasty!!
Chocolate Heart Cakes (vegan, gluten free, grain free)
Mash the banana or pumpkin. Banana is a binding agent, pumpkin doesn’t hold these together as well. If using pumpkin, place 1 T ground flax into 3 T water and let sit for 5 minutes, then add to pumpkin). Melt the coconut oil, honey and nut butter in the microwave, about 1 minute. Stir and add cocoa powder. Add to banana mixture. Stir in almond flour, apple cider vinegar and baking powder. Stir in chips or decorate with chips and m &m’s. Bake at 350 for 25-30 min or until set. This makes about 6 mini doughnuts or a mini cake. Many of my recipes use estimated values. Add more cocoa if you like it rich, less or more sweetener as needed, and more almond flour if you think it’s too sticky. This worked out great for the heart pan.
