Wow. Had a great week away from reality! {no kids!} Workouts were awesome, with a view of the beach, and a smoothie shop across from the gym!  Monday was our travel day, so workouts started on Tuesday.  These two inspired by

The workout with the biggest challenge was Friday (blondeponytail)! I did 1 min run, 10 pushups to warm up then the strength workout to the left next to it. Still sore 2 days later 🙂  The one below (Thursday) was from Unite Fitness online.

The view was awesome.  We were in St Thomas from Monday – Friday, celebrating 10 years of marriage (in June!)

I had not left the kids for more than 2 nights (for a wedding) ever.  It was great for me! Laying on the beach and pool, reading books (two!) and walking all around the resort. Snorkeling, kayaking, paddle boarding, and exploring.


I hit 21 weeks yesterday. Over the hump. With a while to go. I’m very comfortable, now, but in 10 weeks I am positive that will change 🙂

The backup parents did great, figured out their own meals and had fun with the kids!

Now for this week’s meal planning:
The name of the game is easy meals getting back into the swing;
and using up what’s in the fridge from last week.
Also, my husband loved having fresh local fish over the last week, so I’d love to incorporate some fish into the plan.

Sunday – garlic soup and bread
Monday – enchiladas – rice and beans rolled up, cheese and carrots w/ Mac and cheese
Tuesday – Crustless Quiche/breakfast for dinner (Favorite crustless quiche recipe?)

Wednesday – out to dinner – family b’day celebration
Thursday –  Fish or veggie tacos. Maybe they can look like this (from our trip)
Friday – make your own pita pizzas with veggies
Saturday –  spaghetti & meatballs with veggies!
