I can’t believe summer is unofficially over. We spent this last weekend at the beach – it was so great to be down there!
I’m excited for fall weather and the windows open at night – right now, we’re still having weather in the 80s and 90s and I’m ready for that to go! When we’re at the shore, our diets go down the tubes – donuts, ice cream, take out…those things come along with being at the beach, but we had fun! And if I don’t have to worry about dinner, sometimes I just don’t worry 🙂
What are your favorite beach dinners? How do you keep it healthy?
Our first week of school went well, but whoa! Early mornings this year and packing lunches at night – the days have been long! I miss pre-school! It’s hitting me hard that I have two in school full days, it goes way too quickly and is making me sad! I did tackle a few things this week which felt good, though. Bittersweet 🙂
This week is shorter with the holiday, and I didn’t have to meal plan for this weekend, yeah! Here are some meals I have planned for this upcoming week:
Monday – grilled chicken & potatoes (green veggies for me, with hemp seeds)!
Tuesday – fish tacos, rice
Wednesday – quick night with sports – chicken nuggets & pasta
Thursday – toast with avocado / avocado boats and a salad bar
Friday – make your own pizza
Saturday & Sunday – leftovers
We picked peaches a few weeks ago – and now looking forward to apples!
