Hello friends! Wow -four kids is a lot!  I am practically drowning 🙂 This weekend was the baby’s baptism, which was great to have family together. Love these two pics, thanks to my sister for being the photographer for the day!

We made it easy and used Wegmans for all the food – and a Whole Foods Cake.  All was delicious!
We also had leftovers to use for Monday’s lunch and dinner!

Since daylight savings, I have been up and out each morning during the week to the gym or to meet up for runs, hooray! Back in the groove.  The runs I enjoy the most. It feels like you are not working out when running with a friend! We did 5 miles on Thursday, the most I’ve done since probably a year ago! I missed not running the half marathon on Halloween, I really did! And I hope to return to some long distance running soon. My goal for now is to do the 10-miler in May and be in some sort of shape for it!  My short term goal is to attend a class at the gym this week! It is HARD to commit, and get there on time – but it is a goal!

As far as snacking, I bought some Suja Juices when I feel like I need a snack. These are working great! Better than eating healthy baked goods and chocolate chips.

And now for the meal planning ~ I have stopped trying with meat, and trying to just have the family eat what I’m eating too! I know it’s healthy so why try to make meat that I can’t taste and multiple meals. No time, no desire. Keep it easy, keep it quick, keep it healthy 🙂

MEAL PLANNING – week of 11/9

Monday – leftovers from our party
Tuesday – made homemade whole wheat bread, so good! and a big pot of soup for a rainy day!
Wednesday – veggie burgers, rice & broccoli
Thursday – quesadillas & Carrots
Friday – quinoa and black beans? or look up minimalist baker risotto – sounds yummy! (thanks Cassandra!)

My kids are loving roasted chick peas right now! Roast about 20 min with olive oil and salt at 450.
