Howdy friends! Remember when I used to post weekly meal plans? I’m taking a bit of a hiatus from that, because I can’t seem to piece anything together or sit down and plan anything! If it’s up to me these days, we’re having pancakes or take out for dinner!  I’ll happily make healthy snacks and treats though and try out new recipes! And this month could surely just be called Chocolate month in honor of Valentine’s Day. It will never get old! This recipe was inspired by Minimalist Baker’s macaroons. I saw the picture and wanted them now! I had walnuts so I incorporated them into a coconut and date mixture!

Raw Chocolate Brownie Bites

Raw Chocolate Brownie Bites

  • 1 c walnuts
  • about 10-12 medium dates, soaked*
  • 2/3 to 1 cup coconut
  • 1/4 cup cocoa powder*
  • topping…
  • 1 c Dark chocolate ++
  • 1 T coconut oil
  • pink himalayan sea salt

Soak the dates for 10 minutes minimum. Place in food processor until smooth, remove and place in a bowl. Add the walnuts to the food process and process until broken down just before it starts turning into nut butter! Add the dates back into the food process along with the coconut and cocoa. Process until smooth. Add more coconut if the mixture is too sticky, and add cocoa adjusted to your taste. Roll into balls.

For topping, melt dark chocolate with coconut oil for 1 minute in microwave and coat the balls. Sprinkle with sea salt. Place in fridge till hardened and store in fridge.

*For the dates in this recipe, I used whole foods pitted dates. They were pretty dry and didn’t get too smooth and are medium size. In my power balls, I used large medjool dates from Costco – they are very gooey if fresh! I didn’t think to be more specific about date size and dryness factor and it could make or break the recipe!
