I actually have a meal plan to post this week! Things are looking up! We decided to pick one Christmas activity to do this year, which was breakfast with Santa at the local zoo. This weekend was pretty quiet for the weekend before Christmas. It sounded amazing to have no plans, but when someone is tattling on someone else for the 100th time, or the same kid is crying AGAIN about the same THING…it doesn’t seem as appealing as it sounded. But, I did get to do some cooking and baking, searching recipes and meal planning! Score.
Meal planning… ahh.. it makes your life so much easier. Less shopping trips, less money, less chaos at 5pm when you’re wondering what to cook for dinner.
It has been months… maybe over a year since I’ve had the chance to meal plan. And this week is kind of a cheat week since it’s a holiday week… but I’ll take it!
Sunday: Bean dip from Kitchen Stewardship (we soaked the beans together!) with cukes and carrots. Soba noodles & mushrooms.
Monday: pizza burgers & Salad. I’ve made so many types of bean burgers and maybe only one of them will eat it. But I keep trying.. This recipe from the cover of Minimalist Baker’s cookbook!
Tuesday: Mahi Mahi Fish Tacos, guac, rice & beans
Wednesday: Make your own pita pizza. Enough said. Aka cheese and bread. Fresh veggies on the side.
Thursday: Brown rice pasta shells, roasted chick peas.. and a buddha bowl for the adults.
So many choices for buddha bowls out there! This is an option.
Friday: Pizza/maybe order in, something easy, leftovers.
Saturday & Sunday -Christmas Eve and Christmas
