MEAL PLAN for week of Jan 3, 2017

Tuesday ~ Vegan mac and cheese. Chef Chloe. I’m actually reheating cauliflower mac and cheese that the kids didn’t eat, but this one looks good too!  On the side will be an attempt at Hilary’s adzuki and black rice burgers (a fave!) and carrots!

Wednesday – this is a swim practice night, dinners are easy!  Let’s do some nachos!

These nachos are amazing, and let’s be realistic, the kids aren’t going to eat half of the stuff on them so I’ll de-load them a little. Also, beware of using corn chips (most corn is heavily sprayed & GMO).
I love these chips instead!

Thursday –Mushrooms on Toast! Looks delish.  With a side salad. The kids can make and will eat the salad with a homemade dressing!

Homemade salad dressing recipe ~ Savory & Sweet
3 T olive oil
1.5 T apple cider vinegar
1 T Dijon mustard
1.5 tsp raw honey
Salt & Pepper to taste

Friday – another swim night.
We like to order from a favorite local place and have it delivered to swim practice 🙂
Couch tomato has an awesome vegan cheese, gluten free (has eggs) crust pizza!

Saturday –  A big pot of soup! Cold weather is coming! Have you made Oh She Glow’s 10-spice soup yet?  Just read through the recipe first. The spice mix doesn’t ALL go into the soup. Just 1-2 T. First time fatal error.
I love that my little one loves it 🙂  Best eater in the family!

The little one is 19 months old! Don’t they say the youngest child is silly and the class clown? I think she is going to fit the role well 🙂
