February is around the corner, which means next up March, and April – spring!  We have had a very mild winter so far, and have been able to spend time outside!

We spent most of the day yesterday at a swim meet, so lunch was at 3pm, and dinner was thrown together out of anything that was around.

I tried to incorporate foods from this week’s CSA into the meal plan this week.  Over the weekend I made many beet muffins and I still have a good amount of purple cabbage and watermelon radishes to consume! I like the variety in the CSA – foods I wouldn’t typically buy, but I think that summer crop would be the best!

Week of 1/30 Meal planning!

monday –  mac and cheese muffins w/ carrots & sauteed red cabbage

tuesdaybean and rice burritos  – the kids have been asking for a TACO TUESDAY. Hope this counts! with sweet potatoes.
wednesday –  chicken recipe from last week – oops never made that one! with green beans
thursday  ~ This soup looks great w/ sourdough
friday – make your own pizza Friday or, takeout!

Practicing cooking lesson skills

In addition, on Friday, swim practice was cancelled so we used the recipe for homemade tortillas from 100 days of real food to make quesadillas for dinner.
