This is a delicious fall dinner or lunch that is very easy to throw together on a busy night. Black rice is also known as forbidden rice and you can find this at most grocery stores in the specialty section or in health food stores.
HEALTH BENEFITS OF BLACK RICE
Black rice is naturally gluten-free, and higher in protein, iron and fiber than your typical white or brown rice. The outside hull boasts one of the highest levels of antioxidants for any food (Source).
- 1 cup black rice
- 1 T coconut oil
- 2 cups water
- ½ c cashews
- ¼ cup green onions, chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 3 T coconut aminos
- Salt & pepper to taste
- Cook the rice in 2 cups of water with 1 T coconut oil according to package directions.
- When done, fluff rice and add onions and peppers.
- Toss with coconut aminos and top with green onions. Add salt and pepper to taste. Enjoy!
