I love this granola which was adapted from A Healthy Passion many years ago.  I use it on top of smoothies daily, and my kids love eating it solo.  Oats contain beta-glucans, the powerful polysaccharides that helps reduce blood sugar and insulin response, produce an increased feeling of fullness, and reduce total and LDL cholesterol levels.

Maple Vanilla Granola

2/3 cup maple syrup
2 T almond butter
1/4 cup coconut oil
1 tsp vanilla
1 tsp cinnamon
3 cups rolled oats
OR
1/2 cup unsweetened coconut and 2 1/2 cups rolled oats

Preheat oven to 325 degrees Fahrenheit. Melt maple syrup, almond butter and coconut oil on the stovetop until bubbling, a few minutes. Turn off heat and add vanilla, oats and coconut (if using). Stir until combined.  Spread on a parchment lined baking sheet and bake for 18 minutes. Let cool fully before serving. Store in glass air tight container indefinitely.
