I love this granola which was adapted from A Healthy Passion many years ago. I use it on top of smoothies daily, and my kids love eating it solo. Oats contain beta-glucans, the powerful polysaccharides that helps reduce blood sugar and insulin response, produce an increased feeling of fullness, and reduce total and LDL cholesterol levels.
- ⅔ cup maple syrup
- 2 T almond butter
- ¼ cup coconut oil
- 1 tsp vanilla
- 1 tsp cinnamon
- 3 cups rolled oats
- ½ cup unsweetened coconut and 2½ cups rolled oats
- Preheat oven to 325 degrees Fahrenheit. Melt maple syrup, almond butter and coconut oil on the stovetop until bubbling, a few minutes. Turn off heat and add vanilla, oats and coconut (if using). Stir until combined. Spread on a parchment lined baking sheet and bake for 18 minutes. Let cool fully before serving. Store in glass air tight container indefinitely.
