I love this granola which was adapted from A Healthy Passion many years ago.  I use it on top of smoothies daily, and my kids love eating it solo.  Oats contain beta-glucans, the powerful polysaccharides that helps reduce blood sugar and insulin response, produce an increased feeling of fullness, and reduce total and LDL cholesterol levels.

Homemade Vanilla Maple Granola Recipe

Serves: 2 cups
  • ⅔ cup maple syrup
  • 2 T almond butter
  • ¼ cup coconut oil
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 3 cups rolled oats
  • OR
  • ½ cup unsweetened coconut and 2½ cups rolled oats
  1. Preheat oven to 325 degrees Fahrenheit. Melt maple syrup, almond butter and coconut oil on the stovetop until bubbling, a few minutes. Turn off heat and add vanilla, oats and coconut (if using). Stir until combined.  Spread on a parchment lined baking sheet and bake for 18 minutes. Let cool fully before serving. Store in glass air tight container indefinitely.
