We love making peanut butter balls – peanut butter + protein powder and sometimes mixing in mini chocolate chips for a treat.  The consistency of these pecan bars is similar to the balls that we make, but the middle layer of chocolate makes them a real treat!  Have these for dessert or a sweet treat!

Toasted Pecan Bars

  • For the bottom
  • 2 c pecans
  • 1 c unsweetened shredded coconut
  • 1½ - 1¾ c almond flour
  • 1 T raw honey
  • For the middle:
  • ½ cup cacao powder
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  1. Preheat the oven to 300, and roast pecans for 10 minutes to release their oils.
  2. Food process the pecans and coconut, but do not overprocess, or it will become the consistency of nut butter.
  3. Add almond flour and raw honey to the food processor until mixture begins to come away from the side of the processor. You may need to add more if it is too runny. Remove from food processor and wipe down.
  4. Add the cacao, coconut oil and maple syrup to the food processor. This should be the consistency of paste.
  5. On a bread size pan lined with parchment, spread half of the pecan mixture, then all of the cacao mixture, and top with the rest of the pecan mixture. Set in freezer for 30 minutes to firm up, and enjoy. This may be stored in the refrigerator or at room temperature if not too warm.
