woo summer! Summer means ice cream right? A few years ago we bought an ice cream maker – and for the past 2 summers my favorite recipe was a salted caramel recipe. I also made an amazing vanilla batch when I doubled the sugar by accident – oops. But – ever since my dairy free December I have been eating mostly a plant based vegan diet. And this summer, I found some vegan ice cream recipes that you have to try! All ice creams use a can of coconut milk instead of dairy. Many use cashews, and one has a ton of dates and is soft and creamy!
My favorite vegan blog is Minimalist Baker – most of these recipes come right from there!

What’s in the plan for this week? 

We have lots of cucumbers and zucchini growing in our garden. For lunch I love eating them with Detoxinista’s Everyday Basil Vinaigrette dressing! and Ezekial bread croutons. Throw on some pumpkin seeds and hemp seeds for protein and I’m all set!

I came across a few things last week that I wanted to make this week and incorporated.
Last week, the kids loved making sweet potato boats themselves and eating them!  This week we will try avocados!
I’m trying to clean out the pantry before buying lots of new things, so not too many new and exciting things up here!


Sunday – chicken parm (freezer!) with veggies
ended up doing leftover quiche!

Monday – Soba Noodle Salad – tofu, cucumbers, soba noodles
Ended up doing chicken parm

Tuesday – Avocado boats! with chips 🙂
this was a big hit!

Wednesday – Instead of the soba noodle salad, using tofu for tacos!
Tofu scramble

Thursday –  quinoa enchilada bake – 2 peas & pod or Fish tacos

Friday – leftovers/clean out the fridge

Saturday – eating out!

Workouts – I’ve been getting back into the lifting and running. My knees hurt so I need to take it a little easy and be smart!
Below are a few fun workouts I did this week –

When I was pregnant with #3 I did muscle ropes in small group training sessions, loved them!
And was able to do some of that this week, yeah!  Blondeponytail workouts:
