I can’t believe that summer is over! My kids start school tomorrow, and as ready as I am for them to start, I’m not at the same time! We had a fun summer and I think they are ready to start back to a routine! I have a bunch of post-it notes everywhere for what everyone needs as they start off the year and I’m trying to stay organized!
This is a little of what our summer looked like:
Ahh sad to see it go. But looking forward to a handful of little projects that I haven’t had a chance to finish at all and get a little quiet time and 1 on 1 time with the littlest two!
I tried Miyoko’s Vegan Cheese this weekend. Wow. Of course it is made in California, right? What good things are not made there? Stay tuned for a review post on that with recipe soon!
This week’s hit was Veggie Burgers – I added some chao cheese & ketchup on slider buns and they were a big hit!

Monday – chicken parm (leftover), broccoli, and pasta
Tuesday – Mahi mahi fish tacos! & leftover sides
Wednesday – breakfast for dinner
Thursday – baked rigatoni
Friday – burgers & sides

My kids went back to school yesterday and I was ready. I love summer but I’m ready to have a routine and get back to work. I’m a preschool teacher. I know come April I’ll be counting the days until summer vacation again. Enjoy time with your youngest, that was my favorite part when I only had one at home last year.
