This recipe came about when I messed up a recipe that I was following because I wasn’t reading the directions carefully. They do say to read through an entire recipe before you cook it – I never do that. I also tend to not measure exactly, and do a lot of experimenting. Healthier Snickers Bars

For the base:
2 c almond flour
1/2 c maple syrup
1/2 c coconut oil

For the caramel layer:
1 c dates
1/2 c walnuts
1/4 c almond butter
1/4 c maple syrup

For the top layer:
1/2 c cacao powder
1/4 c coconut oil
1/4 c maple syrup

Directions
In a food processor with an S blade, process the almond flour, coconut oil and maple syrup until crumbly. Press into a 8×4 pan lined with parchment paper.  In the same food processor, process the dates until they form a ball. Take out and put aside. Next process walnuts until almost a nut butter, then add in dates, almond butter and maple syrup until this is like a caramel consistency.  Spread on top of bottom layer. Last, add ingredients for the top layer and this should be smooth and spreadable, but not runny.  If it is crumbly, add a little more coconut oil or maple syrup (to taste). Spread on top of the caramel layer. Freeze for 1 hour, then cut into squares. Store in the fridge!
