The start to another school year is days away which is hard to believe! I am not quite ready for the summer to end – it always passes by way too quickly. I love the unscheduled days, extra time with the kids, trips to the beach and pool, and time to explore and go on adventures. It seems much less stressful than the mornings of getting the kids on the bus and off to school, the rush of getting homework done and off to activities, and trying to fit in quality time during the week! Are you with me or are you ready for school to start? It’s always bittersweet.
These almond butter minis are a great size for lunch boxes, made in one bowl and are made with only 5 ingredients. Give them a try and let me know what you think!
Almond Butter Mini Cookies

- Time: 10 mins

1/2 cup pure maple syrup
1/2 cup almond butter
1 cup almond flour
1/4 tsp baking soda
1/4 c+ mini chocolate chips
Preheat oven to 325 degrees. Mix together almond butter and maple syrup. Use a whisk if needed to smooth it out. Add almond flour and baking soda and mix until combined. Stir in chocolate chips. Bake at 325 for 10 minutes. Let cool. Store up to a week, if they last that long!
